Tomato juice concentrate is produced by removing a portion of the water from tomato juice to increase the concentration of tomato solids. It can be used where manufacturers want more efficient delivery of tomato flavor and solids while maintaining a fluid ingredient suitable for pumping, blending and controlled reconstitution.
Depending on the processing route, tomato juice concentrate can retain different amounts of pulp and suspended solids. Some programs may offer a more traditional juice-like profile, while others may be processed toward a cleaner or more clarified appearance for applications where lower turbidity is desirable.

Specification focus
Concentration and clarification level should be selected according to flavor, color, turbidity and finished-product requirements. Buyers may evaluate soluble solids or Brix, pulp content, clarity, color, pH, titratable acidity, flavor profile and microbiological parameters.
The target solids level has both technical and commercial implications. Higher concentration can reduce the amount of water transported and may improve freight efficiency, while also changing the reconstitution ratio and the amount of concentrate required in the finished formula.
Clarification or pulp level is especially relevant in beverage, broth and savory liquid systems. A product with more suspended tomato solids may contribute additional body and visible tomato character, while a more clarified concentrate may be preferred where the formulation requires lower turbidity or less pulp.
Color, acidity and flavor should be assessed together rather than in isolation. Concentration can intensify tomato character, and crop, process and storage conditions can influence the final sensory profile. For sensitive applications, sample evaluation after reconstitution or in the finished formula is recommended.
Reconstitution and formulation
Tomato juice concentrate can be reconstituted with water or used directly as part of a more complex formulation. When targeting a defined finished solids level, manufacturers can use mass-balance calculations to determine the required concentrate and water addition.
In beverage systems, additional review may include pulp suspension, mouthfeel, salt, acidity and spice compatibility. In soups, broths and savory systems, formulators may focus more heavily on flavor intensity, color contribution, body and compatibility with proteins, starches, fats and seasonings.
Because tomato juice concentrate and tomato paste can deliver different texture and flavor profiles even at similar solids contribution, the two should not automatically be treated as interchangeable. The appropriate choice depends on the finished product and process design.
